What you’ll need

  • 4 sweet potatoes peeled and cut into large chunks
  • 5-6 tablespoons of low fat spread
  • A mixture of onion, cabbage, kale or other leafy green veg of your choice
  • Half a cup of milk
  • A pinch of salt

How to make it

  1. Boil the sweet potatoes – cover with cold water and a pinch of salt, bring to the boil and then simmer until soft enough to mash (prick with a fork to test)
  2. Boil the greens in one pan – cover with cold water and a pinch of salt, bring to the boil and cook for around 4 – 5 mins
  3. Drain the sweet potatoes and veg in a colander
  4. Use a potato masher to mash the sweet potato with the spread and milk until nice and smooth
  5. Gently stir in the vegetables and serve as a side dish
