Fish bake with Mediterranean tomato, oven baked rice and vegetables
What you’ll need
Rice and vegetables
- 200g of easy cook rice
- 1 red onion cut in quarters
- 1 red & yellow pepper cut into wedges
- 1 small courgette cut into chunks
- 4 baby corn
- 3 tbsp of olive oil
- 1 tsp of chopped parsley
Spice mix
- ½ tsp of paprika
- 1 tsp of thyme
- 1 crushed garlic clove
- Olive oil
- Sea salt and fresh ground black pepper

How to make it
- Cook the Mediterranean Tomato Fish Bakes according to instructions on pack.
Rice
- Cook rice as per pack instructions
Roasted vegetables
- Mix all spices in a bowl, add all the vegetables and drizzle with olive oil.
- Place all in a roasting pan and cook in oven 200c for 20-25mins
- Mix roasted vegetables with rice check seasoning and sprinkle parsley on top
