What you’ll need
- 6 tbsp good quality mayonnaise
- 4 tbsp fresh parsley, finely chopped
- 1 heaped tbsp red onion finely diced
- 2 heaped tbsp capers
- 2 heaped tbsp baby gherkins
- 2 eggs

How to make it
- Hard boil the eggs, leave to cool, peel and roughly chop.
- Rinse, drain and chop the capers and baby gherkins.
- Place all ingredients in a bowl and stir gently to combine.
