What you’ll need

  • 6 tbsp good quality mayonnaise
  • 4 tbsp fresh parsley, finely chopped
  • 1 heaped tbsp red onion finely diced
  • 2 heaped tbsp capers
  • 2 heaped tbsp baby gherkins
  • 2 eggs

How to make it

  1. Hard boil the eggs, leave to cool, peel and roughly chop.
  2. Rinse, drain and chop the capers and baby gherkins.
  3. Place all ingredients in a bowl and stir gently to combine.
