What you’ll need

  • 1x pack of Young’s Breaded Haddock
  • 4 Medium Flour Tortilla Wraps, Warmed
  • 2tsps Smoked Paprika
  • ½ tbsp Olive Oil
  • 1 Red Onion, Finely Sliced
  • 1 Clove Garlic, Crushed
  • 1 Red & Yellow Pepper
  • 2tsp Fajita Seasoning

Salsa

  • 4 large Tomatoes, Peeled & Finely Chopped
  • 4 Spring Onions, Chopped
  • 1 Small Garlic Clove, Crushed
  • Juice of ½ Lime
  • Drizzle of White Wine Vinegar
  • ½ tbsp Olive Oil
  • 2 tbsp Coriander, Roughly Chopped

To Serve (Optional)

  • Sour Cream

How to make it

  1. Cook the Breaded HaddockFillets according to the instructions on pack. Once cooked sprinkle the fillets with smoked Paprika.
  2. Heat the olive oil in a frying pan over a high heat, add the onions, peppers and fry for 5 mins. Add the garlic and fajita seasoning and fry for a further 1-2 minutes.
  3. Make the Salsa by mixing all the ingredients together.
  4. Top the warmed fajitas with the peppers and onions, followed by the breaded cod. Top with the salsa and sour cream.
