Simply Breaded Haddock Fajitas
What you’ll need
- 1x pack of Young’s Breaded Haddock
- 4 Medium Flour Tortilla Wraps, Warmed
- 2tsps Smoked Paprika
- ½ tbsp Olive Oil
- 1 Red Onion, Finely Sliced
- 1 Clove Garlic, Crushed
- 1 Red & Yellow Pepper
- 2tsp Fajita Seasoning
Salsa
- 4 large Tomatoes, Peeled & Finely Chopped
- 4 Spring Onions, Chopped
- 1 Small Garlic Clove, Crushed
- Juice of ½ Lime
- Drizzle of White Wine Vinegar
- ½ tbsp Olive Oil
- 2 tbsp Coriander, Roughly Chopped
To Serve (Optional)
- Sour Cream

How to make it
- Cook the Breaded HaddockFillets according to the instructions on pack. Once cooked sprinkle the fillets with smoked Paprika.
- Heat the olive oil in a frying pan over a high heat, add the onions, peppers and fry for 5 mins. Add the garlic and fajita seasoning and fry for a further 1-2 minutes.
- Make the Salsa by mixing all the ingredients together.
- Top the warmed fajitas with the peppers and onions, followed by the breaded cod. Top with the salsa and sour cream.
