How to make it
- Cook the Basa fillets as per the instructions on the pack.
- Slice the potatoes in half and part boil for 2 – 3 minutes and drain.
- Toss the potatoes with olive oil then add paprika and sea salt to taste.
- Transfer to a baking tray and roast in a hot oven for 20 minutes.
- Add the tomatoes to the potatoes for the last 5 minutes of cooking.
- Cook the asparagus in boiling water for 1 minute and drain, toss with lemon zest and serve.
