What you’ll need

Cauliflower & Fennel Salad

  • ½ Cauliflower - Sliced
  • ½ Fennel Bulb - Finley Sliced
  • 2tbsp Olive Oil
  • 1 Handful Of Rocket
  • 1tbsp Roughly Chopped Flat Parsley
  • 1tbsp Olive Oil
  • ½Tsp Balsamic Vinegar
  • Sea Salt & Freshly Ground Black Pepper

Herb Mayonnaise

  • 1 Large Handfull Of Flat Leaf Parsley
  • 1 Large Handfull Of Rocket
  • ½Tsp Finely Chopped Red Chilli
  • 4tbsp Good Quality Mayonnaise
  • A Squeeze Of Fresh Lemon Juice

How to make it

Cauliflower & Fennel Salad

  1. Heat the olive oil in a frying pan over a medium heat and saute the cauliflower & fennel for 6 to 8 minutes, season to taste & leave to one side.
  2. When cool, in a bowl gently toss the cauliflower & fennel mix with the rocket, watercress & herbs. Dress with olive oil & balsamic vinegar & season to taste.

Herb Mayonnaise

  1. Place the flat leaf parsley & rocket in a food processor & blend until very finely chopped, add the mayonnaise & pulse until smooth. Place the green mayo in a bowl & stir in the chilli & lemon juice.
