Prosecco Mayonnaise

  • 200ml mayonnaise (shop bought or homemade)
  • 50ml of Prosecco
  • 1 chopped Avocado
  • Handful of Cherry Tomato’s cut into halves
  • 1 bag of Watercress
  • Cayenne Pepper
  • 2 tbsp Olive Oil
  • 1 tsp Balsamic Vinegar
  • 1 Lemon
  • Pinch of Salt & Pepper

How to make it

  1. Cook Scampi as per on pack instructions
  2. Mix the Mayonnaise with the Prosecco & pinch of Cayenne Pepper
  3. In a cocktail glass, place the Watercress followed by the Avocado & Tomatoes. Make a dressing with the Olive Oil, Vinegar and season to taste. Drizzle over the salad
  4. Place Scampi on top & a spoon full of Mayonnaise. Dress with a Lemon wedge and serve.
  5. Serve with a well chilled glass of Prosecco.
