  • 12 cherry tomatoes, halved
  • 1 small courgette, roughly chopped
  • ½ red onion, roughly chopped
  • 1 red pepper, roughly chopped
  • 1 yellow pepper, roughly chopped
  • 12 button mushrooms, halved
  • 3 tbsp olive oil

How to make it

  1. Cook the basa fillets as per the instructions on the pack.
  2. Heat the olive oil on a griddle pan, add the veg and fry for 6-8 minutes until tender and lightly charred.
  3. Divide the vegetables between two and serve with the basa placed on top.
