Popcorn Scampi with Carrot Ribbon Carbonara

What you’ll need

  • 1x Pack of Young’s Popcorn Scampi
  • 3 Large Carrots - Peeled

Carbonara Sauce

  • 150ml Double Cream
  • 1tbsp Grated Cheddar Cheese
  • ½ Garlic Clove – Crushed
  • 1 Egg Yolk

How to make it

  1. Cook the Popcorn Scampi according to the instructions on pack.
  2. Peel the carrots into ribbons using a vegetable peeler.
  3. Over a medium heat fry the garlic in a little oil, whisk in the cream followed by the cheese and a splash of water.
  4. Add the carrot ribbons to the sauce, mix well and heat for 1 minute.
  5. Add the egg yolk, mix well and serve topped with the Popcorn Scampi.
