Popcorn Scampi Wraps

What you’ll need

  • 1 x 300g pack Popcorn Scampi Bites
  • 1 pack soft tortilla wraps
  • 1 bag mixed salad
  • Squeeze of lemon juice
  • 3 tbs mayonnaise
  • 1 red onion diced
  • 1 tomato diced
  • ½ tsp sherry vinegar
  • 1 tsp of olive oil
  • ¼ tsp sugar

How to make it

  1. Cook the Scampi according to back of pack instructions
  2. Mix the mayonnaise and lemon juice together and season to taste
  3. Mix the onion, tomato, vinegar, sugar and oil together Season to taste
  4. Scatter the salad over the wraps and add the Scampi
  5. Top with the lemon mayonnaise and tomato relish then fold over the wraps
